The analysis of the PCS data showed that the hydrodynamic diameters of the PVA NPs were always smaller than those observed by dynamic light scattering (DLS) because of the partial collapse of the NPs due to the high interparticle interaction among the PVA molecules and the high volume fraction of the PVA NPs. In this study, we developed a mathematical model to quantify the changes in the viscoelasticity of the PVA NPs in the presence of pectin from PCS data.
